I think the key change that shows the difference is when Frodo sends Sam away in Mordor. It's a complete betrayal of the Frodo-Sam relationship. One, Frodo wouldn't send Sam away. Two, Sam wouldn't leave. The key aspect of the story between the two is that they went to the ends of the earth together, never giving up on each other.
